How long do organic vegetables last?

I bought organic carrots, bok choy, cabbage, scallions, yellow onions and butternut squash. How long will they last for?

    Variable. The harder vegetables, like butternut squash, could easily last up to a month if stored in a cool dry dark place. Carrots, onions, and scallions will be good for at least a couple of weeks, as will cabbage, if it’s a nice, tight head. Bok choy has the shortest lifespan, but should be good if wrapped in plastic and kept in the vegetable crisper in the fridge for a week.
