It’s funny how if you mention that you are a vegetarian, even today it tends to stop the conversation. You can expect many uninformed skeptical comments from friends and relatives if you intend to become a vegetarian whether it is for economic, religious, animal or health reasons. You might have decided to become a vegetarian because you cannot bring yourself to eat meat any longer. Many Americans today would see huge health benefits to adopting a vegetarian diet. Knowing the health benefits of a vegetarian diet does not make it any easier to stop eating meat. Finally, if you only look upon vegetarian cuisine as a substitute for eating meat then unfortunately you will be disappointed.
